Although tofu is undoubtedly the first word to come to mind in a free association of the term "soy foods,” consumers are witnessing an influx and being made familiar with a growing grocery list that includes many soy foods and soy based products. Drawn perhaps to the folklore and miracle stories that surrounds the Eastern Asian legume, many are realizing the kernel of truth, the many health benefits of soy protein that have made soy foods an increasingly popular, heavily sought after alternative for good-health minded eaters.
There are many different types of foods that are known as soy foods. However, the most popular is tofu. The soy food tofu, a foodstuff made of soy milk, reflects the limitless nature of the soybean. Tofu can be served fresh or fermented as well as frozen and flavored. In some cases tofu can be served delicately flavored and even fried. The popularity of soy foods similar to tofu is common throughout Eastern Asia. Depending on the culture or country, tofu or similar soy foods take a center role in many Easter cuisines. The soy milk creation can be found in braised dishes (very similar to meatloaf) as well as the main ingredient in stews and soups.
Although soy foods in the United States and other Western countries have failed to reach the level of prominence in the edible culture of Eastern Asia, soy foods are enjoying growing popularity. Food makers such as Boca Food Company and Morningstar Farms have successfully marketed to and sold American meat-eaters on the idea of meat-alternatives. Although Morningstar Farms focuses its efforts on vegetable based meatless products, Boca Foods , made popular by the Boca Meatless Burger, features soy protein not only in its burgers, but in its sausages, chik'n products, and lasagna and chili dishes.
Soy foods may never fully replace the prominence of meat in the Westerners diet, however , they have made excellent additions to many diets. Those with ethical or medical concerns have been able to turn to non-dairy soy foods like soy milk for their milk cravings. For those looking to trim inches from their waistlines, instead of reaching for a salty, greasy potato chip or corn chip, they have the opportunity to turn to soy crisps instead. And for those in search of something exotic to add to their diet, consider edamame soybeans-- a Japanese delicacy that features boiled soybeans boiled whole in their pod and served with salt. Soy foods have grown to include a diverse, broad food that features a bit of its exotic tradition, but has assimilated well into the Western diet.
